- 3 cups all-purpose flour
- 1 cup unsalted butter (soft or room temp)
- 2 cups creamy peanut butter
- 1 cup light brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 2 1/4 tsp. vanilla extract
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
Instructions
- Preheat Oven to 350 degrees
- Add unsalted butter, brown sugar, salt, and granulated sugar to stand mixer. Mix on 1-2 until creamy
- Add flour and baking powder to a small mixing bowl
- Add peanut butter to stand mixer and mix until incorporated
- Add eggs and vanilla extract, mix until incorporated
- Slowly mix in the flour mixture, stopping to scrape down the sides of the bowl occasionally
- Roll dough into one-inch balls and place on parchment lined baking sheets. Use a fork dipped in granulated sugar to lightly press down on the dough balls in a criss cross pattern.
- Bake for 10-11 minutes
- Allow cookies to cool on baking sheet for 2 minutes before transferring to a cooling rack
