M&M Cookies
Nothing beats a soft chewy M&M cookie ! Years ago I started baking because store bought snacks were so expensive and I was a single mama on a tight budget. Over the years I have realized that baking from scratch is not only cheaper than store bought snacks, it’s also healthier. Yes, you are eating a cookie so that isn’t the healthiest snack choice, but when it is homemade you have complete control over the ingredients, as a mom that was important to me.

Ingredients
1 cup unsalted butter *room temp (just barely softened)
1 cup light brown sugar, packed
¾ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup M&M’s ¼ – ½ cup chocolate chips (I don’t usually add more than a ½ cup at most)
Step 1
In a large bowl using a hand mixer or stand mixer add 1 cup softened butter, 1 cup light brown sugar, ¾ cup granulated sugar & mix well for about 1 minute. Add 2 large eggs and 2 teaspoons of vanilla extract and mix until combined.
Step 2
Add 3 cups of flour, 1 teaspoon baking soda, and 1 teaspoon salt. Mix until just combined. Fold in your M&M’s and chocolate chips using a wooden spoon.Cover and refrigerate dough for 15-60 minutes.
Step 3
While dough is chilling preheat your oven to 375 degrees Line 2 baking sheets with Pre-cut parchment sheets or silicone baking mats. I use a 1 inch cookie scoop but if you don’t have one drop rounded balls of dough (about 2 tablespoons ) 2 inches apart on cookie sheets. Bake for 7-10 minutes until cookie edges are barely golden brown. Allow to set on the pan for 2 minutes before transferring to a cooling rack.
This recipe has been a huge hit, I bring it to nearly everything we’re invited to. It is quick, easy to follow, and yeilds approx 2.5 dozen cookies depending on your sizing. Save this recipe for a quick reference when you need it. You’ll likely memorize it in know time ! I did.
