Recipe Overview
- Prep Time: 25 minutes
- Cook Time: 30-35 minutes depending on how many cookies per cookie sheet
- Total Time: 55-60 minutes
- Servings: 36 cookies (1 inch pre-cooked)
What You’ll Need
- Hand Mixer or Stand Mixer
- Measuring cups & spoons– I love this set because each measuring cup offers more than one measurement and when you bake a lot sometimes the one you need is dirty!
- Cookie sheets & parchment paper
- A 1″ cookie scoop (optional)
- Mixing bowl (if you don’t have a stand mixer)
Ingredients
- ¾ cup peanut butter (creamy)
- ½ cup *softened unsalted butter
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- ¼ tsp salt
- 1 large egg
- 1 1/4 tsp vanilla extract
- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- Hersey’s chocolate kisses unwrapped (you will need 34-36 depending on your cookie size)
Instructions
- Preheat the oven to 375°F. Line cookie sheets with parchment paper.
- In a large mixing bowl or the bowl combine the peanut butter, unsalted butter, granulated sugar, brown sugar, and salt. Cream together by beating on medium speed until well combined.
- Add the egg and vanilla. Beat until well combined.
- Add the flour and baking soda and beat on low speed just until combined.
- Scoop the dough with a 1-inch cookie scoop or scoop and roll into 1-inch balls. Lightly coat in additional granulated sugar if desired. Place on a prepared baking sheet 2 inches apart.
- Bake for 8 to 10 minutes or until the cookies look puffy and cracked and the bottom just start to turn brown. Immediately press a chocolate kiss into the center of each cookie.
- Allow the cookies to cool completely on the pan, until the chocolate is set.

Notes & Variations
- Use individually wrapped mini-Reese’s cups in place of Hershey Kisses for an extra delicious option.
- The cookies will crack a bit when you press the candy in, that is normal just be gentle.
- For this cookie recipe it is best to use regular creamy peanut butter. Natural peanut butter is great, but it contains a lot of oil and tends to separate.
Fun Ways to Package
- Add 3-4 cookies and about 1-2 tbsp of holiday M&M’s to small cellophane treat bag, add a little tag to the ribbon or just line the bags up in a box to transport and display.
- Cute Valentine’s Day idea, place cookies in a cookie box, sprinkle in some extra wrapped Hershey Kisses and or some Holiday color M&M’s, seal and tag it with a cute saying. Something like…”Extra kisses on our special day” or “Cheer’s my love, to another year of kisses & hugs” *use the hugs Hershey kisses in the box for this one. Get creative!
