- 1 cup whole milk
- 1 cup heavy cream
- 1 lb. gold potatoes peeled & diced into 1” cubes
- 2-3 cups rotisserie chicken (mix of light & dark meat) cut into bite size pieces
- 2 ½ cups frozen sweet corn
Instructions
- Place bacon pieces in a large pot or Dutch oven. Cook on medium heat until bacon is crisp. Remove to a paper towel lined plate and set aside.
- Drain all but 2 tbsp of bacon grease
- Add butter to the pot with the remaining bacon grease and cook until butter is melted
- Add onion, red pepper, and jalapeno and cook, stirring occasionally, about 5 minutes or until softened.
- Add garlic and cook about 30 seconds
- Sprinkle flour over vegetables and stir until it’s fully absorbed. Cook another 30 seconds
- Stir in salt, pepper, smoked paprika, and ground mustard.
- Slowly whisk in chicken broth until completely combined.
- Add water, milk, cream, potatoes, and corn. Bring mixture to a boil and cook until the potatoes are tender.
- Use an immersion blender to puree approximately half of the soup
- Add chicken to the pot. Add more salt/pepper as needed.
- Serve warm topped with crisp bacon crumbles
