What You’ll Need
- 8×8 baking dish
- Measuring cups & spoons
- Cheese grater
- Dip serving dish– optional, but I love this one because you can use it to serve with a variety of options
- Wooden spoon for mixing
- Rubber spatula for transferring to baking dish
- Medium mixing bowl
Ingredients
- 2 14 oz. can artichoke hearts , drained and chopped
- 1 cup sour cream
- 1 cup mayo
- 16 oz. cream cheese, room temp
- 2 cup fresh grated parmesan cheese
- 2 tsp. minced garlic
- 1 cup frozen spinach, thawed and liquid squeezed out
Instructions
1. Preheat oven to 350 degrees F.
2. In a mixing bowl add sour cream, mayo, cream cheese, spinach, artichoke hearts, garlic and 1.5 cups of parmesan cheese. Mix until evenly combined.
3. Place in a greased 8×8 baking dish
4. Sprinkle remaining 1/2 cup of parmesan cheese on top
5. Bake for 20 minutes or until bubbly.
Storage & Serve with Variations
- To make ahead, complete steps 1-4 and store in the fridge for up to 2 days before baking.
- Serve with a variety of crackers and breads. I like to serve with slices of soft pita bread, sesame seed crackers, bagel chips, thin slices of French bread, pita chips, or pretzels. The optional serving dish listed above is great for serving the dip this way.
- Once baked serve leftovers in the fridge for up to 4 days in an air tight container. I like to warm it up in a small pan on the stove top before enjoying for a second time.
- Keep this warm in a small crockpot and serve with your crackers and breads in a cute basket beside it.
- Chop the thawed frozen spinach a bit smaller to make dipping a little easier
- Make a lighter version – swap sour cream with plain greek yogurt, mayo for light mayo, cream cheese for light cream cheese.
