
This recipe makes the most delicious buttery soft cookies, it’s super easy to customize using the flavors you love, and it has simple ingredients. Apricot and raspberry are my go-to jam flavors, but you can do whatever your heart desires. I like to dust them with a tiny bit of powdered sugar after they cool, you can even make an icing to drizzle on top if you’d like the options are endless.

Ingredients
- 1 cup unsalted butter (room temperature)
- â…“ cup sugar
- â…“ cup light brown sugar (packed)
- 1 large egg yolk
- 1 tsp vanilla extract
- 2 ¼ cup app-purpose flour
- 2 tsp cornstarch
- ½ tsp salt
- ½ cup sugar for rolling (optional)
- â…“ cup jam or preserves, apricot and raspberry are great choices
Instructions
- To stand mixer add butter and both sugars, mix until creamy.
- Add egg yolk and vanilla extract, mix until well combined, be sure to scrape down the sides of your bowl to ensure everything gets fully incorporated
- Add flour, cornstarch, and salt to a separate bowl and mix gently
- Slowly add your dry ingredients while mixing on low, occasionally stopping to scrape the sides and bottom of the bowl. Dough will be crumbly, I suggest removing the bowl at this point and mixing with clean hands.
- Scoop dough with a tablespoon or 1″ cookie scoop and roll each 1″ ball well so that there are no seams or cracks.
- Roll each ball lightly in granulated sugar, place each ball 2″ apart on a cookie sheet lined with parchment paper. Gently press thumbprint into each ball or use the back of a round teaspoon.
- Preheat oven to 375F, chill dough balls in freezer for 30 minutes prior to baking while oven is heating.
- Place jam or preserves in a microwave safe dish or heat on low in a small pan, just warm enough to make it easy to stir, about 5-10 seconds
- Remove cookies from freezer, fill each thumbprint to the brim, bake for 11 minutes or until edges are just starting to turn golden brown. Allow cookies to cool completely on cookie sheet before transferring to a plate or cooling rack.
