
Beer, bacon cheddar dip is a delicious game day option! It will be the first thing that disappears from the snack table I promise. I have made this many times and I still get requests when I’m invited to parties, sometimes I wonder if they just want the dip!

What You’ll Need
- Measuring cups and spoons
- 12″ skillet – I love this one because it has deep sides to accommodate a recipe like this
- Slotted spoon for bacon
- Rubber spatula
- Whisk
- Small crockpot – optional, if you don’t have a small one you can either double the recipe for a larger batch to fit in a larger crockpot or you can use a baking dish and heat it when you arrive or when guests are arriving if you are the host.
Ingredients
- 1/2 pound bacon
- 2 tbsp reserved bacon fat
- 3 tbsp all-purpose flour
- 3/4 cup whole milk
- 1/2 cup beer of choice
- 1 tbsp. Worcestershire sauce
- 2 tsp. stone ground mustard
- 3/4 tsp garlic powder
- 1/2 tsp ground black pepper
- 1/4 tsp salt (optional)
- 2 cups shredded sharp cheddar cheese
Instructions
- Chop bacon and pan fry in a 12″ skillet. Once bacon reaches desired level of crispiness, remove from the pan with a slotted spoon, placing on paper towels to drain.
- Remove the hot bacon grease from the pan by carefully pouring into a ramekin or coffee mug. Scrape with a rubber spatula to remove excess grease, but do not wash.
- Add 2 TBSP of the hot bacon grease back into the pan.
- Adjust heat to medium-low. Add flour and whisk together with the bacon fat to make a roux. Allow to cook 1 – 2 minutes, until it turns a light golden brown.
- Whisk in the milk and beer slowly, while scraping the bottom of the pan to loosen all of the extra bits of bacon flavor from the bottom of the pan. The mixture will thicken as it simmers.
- Add Worcestershire sauce, mustard, garlic powder, black pepper, and salt. Whisk to combine.
- Chop of shred the cheese, then stir into the sauce, allowing the cheese time to melt completely.
- Chop the now cooled bacon again to make the chunks even smaller.* Reserve a few tablespoons of bacon for garnish, if desired, then stir the rest into the beer cheese dip.
Serve With 🥨and Variations
- Serve with soft pretzel bites and a variety of crunchy pretzels * fan favorite is usually the soft pretzel bites. You can either find them in the bakery section of your local market or the freezer section to be baked in advance.
- Beer options- I have used Sam Adams, Guiness, and Yuengling. You can experiment and get creative here. Our favorite was Sam Adams and Yuengling, but this is a great opportunity to use a straggler that is just taking up space in your fridge.
- When I serve this at parties, I fill a small crockpot to keep it warm, and I just bring the reserves in a separate container. You will go through it all trust me once they try it, you’ll have to move them out of your way to replenish.
- Use a cute basket lined with a clean decorative dish towel to display your pretzel choices for dipping. You can also crinkle up some wax paper to line the basket as an alternative.

I would suggest swapping out the standard beer with a a non-alcoholic version such as Budweiser Zero or Heineken 0.0, just be sure to read the label as some non-alcoholic beers still contain a low percentage. 🌿Best- Hey Ivy
