Variation
Try making mini pumpkin pies! this is excellent for entertaining. Simply roll out your pie crust and cut into circles. Form each circle to greased cupcake tins and fill with your pie filling. Adjust your baking time- cook for 30 minutes, check with a tiny jiggle, add time in 2-5-minute increments until you reach perfection. Your pie crust should be golden, and an inserted toothpick should come out clean. Cool the muffin tins on a cooling rack.
